Sweet Chili Kumara and Cashew Salad with Telegraph Hill Hempseed Ginger Sesame Dressing

Ingredients

  • 650g Orange kumara
  • 1 Diced red onion
  • 1 Diced red capsicum

* You can add Diced celery if you like it

  • TH Extra Virgin Olive oil
  • Sweet Chili sauce
  • 1 can corn kernels
  • 1 handful baby spinach
  • 1 cup cashews
  • Salt and Cracked pepper
  • Telegraph Hill Hempseed Ginger Sesame Dressing

Instructions

  1. Toss vegetables through oil and season
  2. Roast at 220 degrees C for 15 minutes
  3. Drizzle roasting vegetables with Sweet Chili Sauce
  4. Roast a further 10 minutes, or until kumara cooked but still firm
  5. Leave to cool
  6. Mix through corn kernals, baby spinach and cashews to roasted vegetables
  7. Drizzle with Telegraph Hill Hempseed Ginger Sesame Dressing and gently mix.
  8. Serve cold and enjoy

*For smaller portions you can also pan fry vegetable mix.
